Is it possible to shoot an array of images using a regular DSLR camera and process them as a lightfield set? Obviously nothing could be moving in the scene or you would have to have a bunch of cameras synched. But is it or would it be possible to create a larger lightfield using a large array of large cameras?

Yes, it has been done before. Search "gantry light field" and you will find many hits.
